Give me and my best friends a jar of JIF creamy, graham crackers and chocolate, and we're all set for a girls night in. That lethal combination has this uncanny ability to keep conversation and laughter going at alarming rates. There's just something about indulging with your girlfriends that makes the experience so much more pleasurable. With Sex and the City reruns playing on tv, you gush about guys, laugh at the most shallow things, and exchange story after story.. all fueled by spoonfuls of peanut butter, bites of luscious chocolate and crunchy grahams. I wanted to make something completely reminiscent of that sugar high; something that combined all the said elements harmoniously. It shouldn't be cloying, but it should still be able to send one into that delicious reverie. And so, this peanut butter pie was born!
I started out with a graham cracker cookie crust; light + buttery affair that's the perfect canvas for the richness to come.
A layer of rich semi-sweet Callebaut chocolate (a fine Belgian variety) then follows the graham crust. Next, an oh-so-creamy whipped peanut butter mousse. Lastly, the pie is topped with a layer of whipped cream, drizzled chocolate, and chopped pecans.
This is the kind of pie that's best enjoyed in the setting I described above, but virtually any setting or event would be great as well. It's creamy, rich, velvety, and luscious.. yet surprisingly, light enough not to send you into a sugar coma.
