A few years ago, I remember staying at a really bad hotel somewhere in the outskirts of Hong Kong and my dad trying to console us by saying there was a great pie and tart shop in the hotel. After I had my first chicken pie and tasted the buttery, crumbly, oh-so-perfectly baked crust, I was hooked. Suddenly the hotel's shady reputation and its extremely out-of-the-way location didn't seem so terrible anymore.
A lot of bakers probably have their tried and tested recipe for the perfect crumbly crust. Honestly, I'm still in the trying and testing phase, so I'm always so excited when I stumble upon perfection such as this! There's not much information about this chain of shops on the internet, but if you happen to find yourself in HK, do ask around for a nearby Pie & Tart Specialists shop. If great crust makes your heart beat faster as it does mine, you definitely won't be sorry.
